Ingredients
- 240 ml orange juice
- 240 ml water
- 95 gr pearl barley
- 65 gr apricots (dried)
- 16 gr mixed nuts
- 14 gr butter
Put the orange juice & water into a pan. Add the paricots cut intosmall pieces & the spice. Bring to a boil & add the barley. Cover &simmer for about 1 hour, until the barley is tender. Add more orangejuice if necessary. The liquid should be absorbed when the barley isready.
Stir in the margarine & the nuts if using. Serve hot either as is orwith a splash of soymilk.
