Ingredients
- 2 eggs
- 1/2 candied cherries
- 1/4 bourbon
- 240 gr candied pineapple
- 200 gr pecans
- 190 gr flour
- 160 gr raisins (white)
- 110 gr brown sugar
- 95 gr shortening
- 22 ml buttermilk
- 2 gr vanilla
- 2 gr baking soda
- 1 gr allspice
- 1 gr nutmeg
- 1 gr cinnamon
Cream shortening and sugar; beat in eggs and add vanilla. Dissolve soda in buttermilk. Combine 1 c. flour and spices; add to creamed mixture alternately with buttermilk and bourbon. Beat well after each addition.
Coat fruit with half c. flour; stir fruit and nuts into batter. Drop by teaspoonfuls onto greased baking sheets and bake at 180ÂșC or 10-15 min.
Makes 6 dozen cookies.
