Ingredients
- 240 gr firm silken tofu
- 130 gr wholewheat flour
- 130 gr all purpose flour
- 85 gr raisins
- 80 gr maple syrup
- 60 ml apple juice
- 60 gr walnuts
- 9 gr baking powder
- 3 gr cinnamon
- 2 gr baking soda
- 1 gr salt
Preheat oven to 230ºC . Oil baking sheets. Blend tofu until smooth. Blend in apple juice & 3 tb maple syrup. Transfer to a mixing bowl & set aside. Sift together the next 6 ingredients. Fold into the tofu mixture. Gently stir in the walnuts & raisins. Turn dough onto a lightly floured board & form into a ball. Roll out dough to a 1 cm thickness. Cut with a cookie cutter. Using a pastry brush, glaze with the remaining syrup if you wish. Bake for dozen minutes. Serve immediately.
