Ingredients
- 240 gr firm silken tofu
- 130 gr wholewheat flour
- 65 gr rye flour
- 65 gr wheatgerm
- 60 ml apple juice
- 5 gr baking powder
- 5 gr baking soda
- 1 gr salt
- 1 gr sesame seeds
Preheat oven to 230ºC & oil cookie sheets. Blend tofu until smooth & blend in the apple & lemon juices. Transfer to a medium-sized mixing bowl & set aside. Sift together remaining ingredients, except the sesame seeds. Fold flours & seeds into tofu mixture. Turn out onto a lightly floured board, roll out dough to 1 cm thickness, cut with cookie cutter & bake for dozen minutes. Serve immediately.
