Ingredients
- 5 eggs
- 1 cinnamon sugar
- 1/2 orange (grated)
- 220 gr currants (dried)
- 130 gr sugar
- 130 gr flour
- 120 gr walnuts (chopped)
- 110 gr butter softened
- 80 gr quick-cooking oats
- 9 gr baking powder
- 5 gr pumpkin pie spice
- 4 gr vanilla
Beat together first 5 ingredients until blended. Mix together the next 6 ingredients and beat in until dry ingredients are just moistened. Do not overbeat. Divide batter between dozen paper-lined muffins cups and sprinkle tops with cinnamon sugar. Bake in a 375 degree oven for about 25 minutes, or until a cake test, inserted in center, comes out clean.
