Ingredients
- 10 peppercorns (white)
- 5 dill sprigs
- 3 parsley sprigs
- 2 celery stalks with leaves
- 2 carrots
- 2 leeks
- 2 bay leaves
- 1/2 head of lettuce
- 1,900 ml water (cold)
- 575 gr fish trimmings
- 60 ml tarragon vinegar
- 3 gr salt
- 2 gr thyme (dried)
Combine all ingredients in 4to 5 litre saucepan and bring to boil. Reduce heat and simmer uncovered 45 minutes. Strain through colander or cheesecloth-lined strainer before using. --
