Ingredients
- 4 egg yolks
- 2 eggs
- 200 gr sugar
- 60 ml lemon juice
- 60 ml cream (heavy)
- 55 gr butter
- 8 gr flour
- 8 gr cornmeal (yellow)
- 6 gr lemon rind (grated)
Unbaked 23 cm pie crust Preheat oven to 180ºC . Beat eggs, yolks, and sugar together at high speed for two minutes. Add butter and cream; beat again at high speed for two minutes. Add flour, cornmeal, lemon juice and rind; mix well. Pour into crust and bake 10ºC 60 minutes until top is medium brown. (Test with toothpick.) Allow to cool to room temperature before serving with whipped cream topping if desired. Serves: 6 slices.JM. The Hummingbird Inn Goshen, Virginia.
