Ingredients
- 2 eggs (beaten)
- 190 gr crabmeat
- 55 gr bread crumbs
- 30 ml mayonnaise (light)
- 18 gr butter (unsalted)
- 10 ml dijon mustard
- 2 gr thyme
- 1 gr italian parsley (chopped)
- 1 gr cayenne pepper
- 4 slices scallion thinly (sliced)
Combine all ingredients except scallions. Mix well. Add sliced scallions and mix. Form into eight 5 cm crab cakes. In a 25 cm skillet, melt butter over medium-high heat. Heat butter until hot but not smoking. Cook the crab cakes for 3 to 4 minutes on each side or until golden. Recipe By : Maine Ingredients
