Ingredients
- 3 eggs
- 375 gr all purpose flour
- 260 gr zucchini
- 250 gr pineapple (crushed)
- 220 gr brown sugar
- 240 ml oil
- 200 gr granulated sugar
- 140 gr pecans
- 85 gr raisins
- 9 gr vanilla extract
- 5 gr baking soda
- 5 gr baking powder
- 3 gr salt
Mix eggs, sugar, salt, vanilla, zucchini, and soda. Add flour and baking powder, oil and pineapple alternately to the mixture. Add raisins and nuts. Bake at 180ÂșC or 1 hour in a 9 x 30 cm pan. Will serve 24. Use icing of your choice. Pat Dwigans ----
