Ingredients

- 2 onions
- 1 text only
- 1/2 bunch of coriander (fresh)
- 325 gr green prawns
- 50 ml desiccated coconut just enough boiling water to moisten
- 30 gr coconut (fresh)
- 30 ml oil
turmeric, the mango and simmer for 10 minutes. Add half a cup of thick coconut milk and the prawns and cook for a further few minutes, just until the prawns turn pink. Remove to a serving dish, scatter the chopped coriander leaves over the top an serve with rice. Makes 4 to 5 servings.
