Ingredients
- 1 egg
- 1 crumb topping
- 160 gr quick-cooking oats
- 130 gr unbleached flour
- 110 gr brown sugar
- 85 gr raisins
- 60 ml milk
- 60 ml vegetable oil
- 9 gr baking powder
- 5 gr pumpkin pie spice
- 1 gr baking soda
- 1 gr salt
Sift together flour, baking powder, pumpkin pie spice, baking soda and salt; set aside. Combint pumpkin, brown sugar, egg, milk, oil, oats and raisins in bowl; blend well. Add dry ingredients all at once, stirring just enough to moisten. Spoon batter into grease 8 cm muffin-pan cups, filling 0.66666666666667rds full. Sprinkle with crumb topping. Bake in 200ÂșC . oven 18 to 20 minutes or until golden brown. Serve hot with homemade jelly or jam. CRUMB TOPPING: Combine half c brown sugar (packed), 1 T unbleached flour, quarter t pumpkin pie spice and 2 T butter or regular margarine in bowl. Mix until crumbly.
