Ingredients
- 1 1/2 bisquick
- 1 summer squash (yellow cut lengthwise into)
- 240 gr eggplant cubed
- 240 ml tomato sauce italian style chunky
- 170 gr mozzarella cheese (shredded)
- 80 ml water (very hot)
- 65 gr green pepper (chopped)
- 60 gr onion (red chopped)
- 1 gr pepper (red crushed)
- 4 slices ths
Directions: Move oven rack to lowest position. Heat oven to 230ºC . Grease cookie sheet or 30 cm pizza pan. Mix baking mix and water until soft dough forms. Press dough into 30 cm circle on cookie sheet or press in pizza pan, using fingers dipped in baking mix; pinch edge to form 1 cm rim. Spread tomato sauce over dough. Top with onion, bell pepper, squash and eggplant. Sprinkle with red pepper and cheese. Bake dozen to 15 minutes or until crust is golden brown.
