- 2 green peppers
- 950 gr kidney beans (canned)
- 400 gr mexican style corn (canned drained)
- 350 gr rice (cooked)
- 170 gr cheddar cheese (shredded)
- 160 gr lettuce (shredded)
- 40 gr tortilla chips
- 16 ml vegetable oil
- 2 slices onions

Add green peppers and onions; cook until tender crisp. Add salsa, beans, corn and rice; cook until thoroughly heated. For each serving, place 1 cup lettuce on serving plate. Surround lettuce with tortilla chips. Top with warm vegetable mixture. Sprinkle quarter cup cheese evenly on top of each serving. Garnish with sour cream.
