Ingredients
- 6 egg whites
- 3 eggs
- 450 gr strawberries (sliced)
- 190 gr wheat flour
- 150 gr sugar
- 120 ml skim milk
- 120 ml fat-free strawberry yogurt
- 65 gr pecans (chopped)
- 65 gr bran cereal flour
- 9 gr baking soda
- 7 gr vanilla
- 4 gr cinnamon (ground)
In a large bowl combine flour, sugar, baking soda and cinnamon. In another bowl, beat eggs; add milk, yogurt and vanilla. Mix well; stir into dry ingredients until just moistened. Fold in the remaining ingredients. Fill muffin tins sprayed with vegetable spray until 0.75 full.
Bake at 190ÂșC or 20 to 25 minutes or until done. (Muffins are done when top springs back when touched with fingertip.)
