Ingredients
- 6 eggs (beaten)
- 300 gr shrimp (cooked chopped)
- 120 ml mayonnaise
- 100 gr italian bread crumbs
- 45 ml dijon mustard
- 14 gr parsley (chopped)
- 7 ml worcestershire sauce
- 3 gr salt
- 2 ml tabasco sauce
- 1 gr cayenne pepper
Mix all ingredients to blend thoroughly. For each cake, shape quarter cup of batter into a patty 3 cm thick. Dip into additional beaten eggs and coat with addit ional bread crumbs. Deep fry at 350^ until golden and crisp, about 3 minutes fo r each. Garnish with lemon wedges. ~D. Rattray~
