Ingredients
- 2 seedless grapes
- 1 1/2 currents
- 3/4 candied citron
- 900 gr beef (ground)
- 850 gr brown sugar (light)
- 750 gr apple cider
- 650 gr apples
- 450 gr beef suet
- 240 ml molasses
- 230 gr walnuts (chopped)
- 230 gr brandy
- 75 gr candied lemon peel
- 60 ml lemon juice
- 8 gr salt
- 8 gr cinnamon
- 6 gr allspice
- 5 gr nutmeg
- 2 gr mace
Place meat in a very large saucepan with just enough water to cover & simmer for half hour. Drain meat & return to pan. Add all remaining ingredients, except lemon juice & brandy. Bring mixture to a boil & reduce heat & simmer for 1.5 hours, stirring occassionally. Stir in lemon juice & brandy. Ladle mincemeat into sterilized jars & seal, cool & store. Allow the mincemeat to mature for at least 6 weeks before using.
