Ingredients
- 3 pounds ripe tomatoes
- 12 ounces tomato juice
- 1 cup celery (chopped)
- 1/2 pound cucumber
- 1/2 cup pepper (chopped red)
- 1/2 cup onion (chopped red)
- 1/4 cup good olive oil
- 3 tablespoons wine vinegar (red)
- 3 tablespoons cilantro (chopped)
- 1 tablespoon jalapeno pepper (chopped)
- 1 teaspoon garlic (chopped)
- 6 slices french bread (toasted)
- 1 slice lime (cut into)
Combine all ingredients in a blender or food processor (except bread and limes), and puree until smooth. Transfer to a large bowl and refrigerate for 4 hours. Meanwhile prepare relish.
