Ingredients
- 900 gr ripe tomatoes
- 350 ml tomato juice
- 100 gr celery (chopped)
- 100 gr cucumber
- 65 gr pepper (chopped red)
- 60 gr onion (chopped red)
- 60 ml good olive oil
- 45 ml wine vinegar (red)
- 26 gr cilantro (chopped)
- 8 gr jalapeno pepper (chopped)
- 3 gr garlic (chopped)
- 6 slices french bread (toasted)
- 1 slice lime (cut into)
Combine all ingredients in a blender or food processor (except bread and limes), and puree until smooth. Transfer to a large bowl and refrigerate for 4 hours. Meanwhile prepare relish.
