- 6 garlic (cloves)
- 3 onions
- 3 carrots
- 3 other left (pieces whole)
- 2 bay leaves
- 1 rosemary sprig
- 1/2 pepper
- 1/2 salt
- 4 lb beef chuck roast (boneless)
- 12 oz pasta
- 1 c parmesan cheese
- 3/8 c salt pork
- 1/4 cup parmesan cheese (freshly grated)
- 2 oz shiitake mushrooms (dried)
- 2 tb pepper (freshly ground)
- 2 tb flour
- 2 ts salt
- 1/2 slices orange peel
- some is necessary to coat the pasta
Serve the daube directly from its casserole. Pass additional cheese at the table. Serves 6 to 8. PER SERVING: 665 calories, 35 g protein, 41 g carbohydrates 33 g fat (14 g saturated) 108 mg cholesterol, 776 mg sodium, 2 g fiber.
