- 1,800 gr beef chuck roast (boneless)
- 150 gr pasta
- 80 gr parmesan cheese
- 45 gr salt pork
- 20 gr parmesan cheese (freshly grated)
- 20 gr shiitake mushrooms (dried)
- 18 gr pepper (freshly ground)
- 16 gr flour
- 6 gr salt
- 1/2 slices orange peel
- some is necessary to coat the pasta
