- 1 1/2 slab bacon
- 1 sieved egg place beans (hard cooked)
- 10 cups liquid
- 8 c water
- 6 cups beans
- 19 oz tomatoes (peeled)
- 1 lb black beans
- 2 c chicken
- 1 1/2 c seeded (finely chopped)
- 1 1/2 c onions (finely chopped)
- 1/4 c wine vinegar (red)
- 1 1/2 tb olive oil
- 2 ts celery salt
- 1 ts cumin (ground)
skin and bones from ham hocks. Chop ham; set aside. Add beam mixture to cooked tomato mixture. Add chopped meat and coriander. Simmer until thoroughly heated. Serve in soup bowls; garnish with sieved hard cooked egg, if desired.
