Ingredients
- 2 eggs
- 1 1/2 lime zest
- 1 form when beaters are lifted
- 1 coconut-graham-cracker
- 1 1/2 c milk
- 1 1/2 c whipping cream (heavy)
- 1 1/4 cups milk
- 1 c coconut cream
- 1 cup microwave safe measuring
- 1/2 c lime juice (fresh)
- 1/4 cup milk in
- 1/4 c cream of coconut
- 3 tb water (cold)
- 1/4 c cornstarch
- 2 ts vanilla
- 1 1/2 ts gelatin (unflavored)
- 1 1/2 teaspoon lime peel
- 1/2 ts vanilla extract
- 1/8 ts salt
heavy cream, cream of coconut and vanilla in a medium-size bowl until stiff peaks form. Pipe a lattice design on filling, then a border around edge of pie (using a pastry bag fitted with a star tip) or spread cream on filling. Sprinkle with coconut, if desired.
