Ingredients
- 12 pinneapple chunks
- 2 eggs
- 1 1/2 cups all purpose flour
- 1/2 cup golden raisins
- 1/2 cup dates (diced)
- 3/8 cup vegetable oil
- 1/2 cup pecans (chopped)
- 1/4 cup brandy
- 1/2 cup orange peel (diced)
- 1/2 cup lemon peel (diced)
- 2 tablespoons brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon allspice (ground)
Combine first 5 ingredients in mixing bowl.Add the rest,except the pineappl e.Mix well.Pour into baking cups,filling each 2/3 full.Top each with a pineap ple chunk.Bake 30-35 min. at 325 degrees F. Cool.
