Ingredients
- 1 egg
- 2 1/8 c brown sugar
- 2 c wheat flour (whole)
- 7/8 c butter
- 1 c raisins
- 1 c nuts (chopped)
- 3/4 c rolled oats
- 1 c apple
- 1/4 c apple juice
- 1 ts baking soda
- 1 1/2 ts cinnamon
- 1/2 ts salt
Heat oven to 375 F. Grease cookie sheets. In large bowl, beat 1-1/3 cups brown sugar and 1/2 cup margarineuntil light and fluffy. Add egg; blend well. Beat in apple and apple juice. Lightly spoon flour int measuring cup; level off. Add flour, baking soda, 1 ts cinnamon and salt; mix well. Stir in raisins and nuts. In shallow bowl, combine rolled oats, 3/4 cup brown sugar and 1/2 ts cinnamon. Add 1/3 cup margarine, stir until particles are moistened. drop cookie dough by heaping teaspoonfuls 2 inches apart onto greased cookie sheets. Top each with 1/2 ts topping. Bake at 375 F for 8-12 minutes or until edges are golden brown. Cool 1 minute; remove from cookie sheets. 4 dozen cookies. ----
