Ingredients
- 2 potatoes (chopped)
- 2 carrots (grated)
- 1 lentils (rinsed)
- 1 onion (chopped)
- 32 oz tomato juice
- 2 c water
- 15 oz garbanzo beans
- 15 oz kidney beans
- 14 1/2 oz tomatoes pureed
- 1 c pepper (red diced)
- 1 c green pepper (diced)
- 10 oz broccoli (frozen chopped)
- 2 tb chili powder
- 2 ts garlic powder
- 2 tb parsley (dried)
- 1 ts cumin (ground)
- 1 ts basil (dried)
Combine everything. After bringing to a boil, reduce heat & simmer, covered, 30 45 minutes or until lentils are tender.
