  • 33 cm swiss roll tin with non-stick baking paper
  • 4 eggs
  • 1 lemon rind (grated)
  • 300 ml double cream whipped
  • 225 g mixed berries
  • 175 g chocolate (plain)
  • 125 g caster sugar extra dusting (plus)
  • 50 g desiccated coconut
  • 1/2 tsp vanilla essence

To freeze: freeze at the end of stage 2 for up to 3 months.
