Ingredients
- 1 tbs
- 1 egg
- 1/2 c raisins
- 3 3/4 oz quick-cooking oats
- 1/4 cup firmly packed brown sugar
- 2 tb water
- 1 tb flour
- 1 ts vanilla extract
- 1/2 ts double-acting baking powder
- 1/2 ts baking soda
- 1/4 ts cinnamon (ground)
Preheat oven to 375 degrees. In a medium bowl, combine flour, oats, baking powder, baking soda, cinnamon and sweetener. Add margarine. Mix well with a fork until mixture resembles coarse crumbs. Beat egg with vanilla and water. Stir into dry ingredients. Add raisins and stir until all ingredients are moistened. Drop mixture by teaspoonfuls onto a nonstick cookie sheet, making 32 cookies. Bake 10 to 12 minutes, until lightly browned. Remove to a rack to cook. Makes 8 servings; each serving = 4 cookies. Each serving gives: 1 Bread, 1 Fat, 1/2 Fruit, 6 additional calories (add 24 calories if brown sugar is actually used as the sweetener). ----
