Ingredients
- 1/2 scallions (sliced)
- 10 oz green beans (frozen cut)
- 2 c swiss cheese (shredded)
- 10 oz green peas (frozen)
- 1 c green pepper in (cut)
- 1 c cucumber (chopped)
- 3/8 c yogurt (plain)
- 3/8 c mayonnaise
- 3 tb parmesan cheese (grated)
- 1 tb lemon juice
- 1 t sugar
- 1 1/2 ts dill (dried)
- 1/4 ts salt
- 1/4 ts pepper
In a small bowl, combine all the dressing ingredients. Mix until well-blended; set aside. If not serving immediately, cover and chill until ready to use. Place the cooled rotini in a large bowl and toss with the remaining ingredients, except the dressing. Cover and chill until ready to use. Just before serving, mix the dressing again and toss into the salad.
