Ingredients
- 1/4 radicchio
- 1/4 c wine vinegar (red)
- 1/2 c thinly mushrooms (sliced)
- 2 tb lemon juice
- 1/2 lb spinach washed (fresh)
- 1 1/2 t olive oil
- 1 t parmesan (grated)
- 1/4 ts pepper (freshly ground)
- 8 slices pitted black olives
- 1 slice sweet pepper thinly (red)
Cheese Combine Radicchio, Spinach, Mushrooms, Red Pepper & Olives in Individual Salad Bowls. Cover & Chill Until Serving Time. Combine Vinegar, Lemon Juice, Olive Oil & Pepper in A Glass Jar; Cover & Shake Vigorously. Pour Mixture Evenly Over Salads. Sprinkle Each Salad With 1 t. Parmesan Cheese Before Serving. Fat 7.6.
