Ingredients
- 1 lime
- 5/8 salsa (fresh)
- 475 gr black beans
- 160 gr cherry tomato (halves)
- 50 gr thinly celery (sliced)
- 30 ml honey
- 40 gr thinly onion (very sliced red)
- 30 ml juice
- 30 ml vegetable oil
- 18 gr cilantro (fresh)
- 1 slice green
Combine shrimp, beans, pepper, celery and onion in a large bowl. Combine remaining ingredients (except tomatoes), add half tsp salt and mix well. Pour over shrimp mixture; toss lightly to coat. Cover and chill at least 2 hours or up to 24 hours, tossing lightly occasionally. Spoon salad on lettuce lined plates, garnish with tomatoes. //ichael & Ms. // | /// | //eslie
