- 25 mushrooms (fresh)
- 8 mushrooms at a time in oil until golden (hot)
- 3 green onions
- 1 stalk celery
- 1 egg (white)
- 700 ml vegetable oil
- 140 ml water (drained whole)
- 130 gr all purpose flour
- 120 ml milk
- 65 gr cornstarch
- 7 gr baking powder
- 10 ml rice wine
- 5 ml soy sauce
- 3 gr cornstarch
- 2 ml hoi sin sauce
- 2 gr salt
in milk and water. Yield: 2 dozen
