Ingredients
- 500 gr all purpose flour
- 350 ml boiling water
- 325 ml warm water
- 130 gr wholewheat flour
- 65 gr cracked wheat
- 50 gr shortening
- 30 ml molasses
- 30 ml honey
- 4 gr salt
- 1 package dry yeast
Cook cracked wheat in the boiling water for 10 minutes, till all the water is absorbed. Dissolve yeast in one third c of warm water & let proof. Stir together shortening, salt, molasses, honey & the rest of the water & add to cracked wheat. Stir in the flours a little at a time. When the dough is stiff, turn out onto a floured board & knead for 10 minutes, use extra flour if necessary. Shape into a ball, place in oiled bowl, cover & let rise till doubled. Punch down & shape into 2 loaves. Let rise till doubled. Bake at 190ÂșC for 30 to 35 minutes. Cool on racks. "Beard on Bread"
