Ingredients
- 16 fruit cocktail
- 4 size (serving)
- 4 eggs
- 325 gr firmly packed brown sugar
- 190 gr coconut
- 110 gr butter
- 100 gr sugar
- 70 gr nuts
- 60 ml oil
- 1 package cake mix (yellow)
- 1 package jell-o instant pudding
- 1/2 packages evaporated milk
Combine cake mix, pudding mix, fruit cocktail with syrup. 1 cup of coconut, eggs and oil in large mixer bowl. Blend, then beat at medium speed for 4 minutes. Pour into greased and floured 13x9 inch pan. Sprinkle with brown sugar and nuts. Bake 160ÂșC or 45 minutes, or until cake is done. (Do not under bake). Cool 15 minutes. Combine butter, granulated sugar and milk in saucepan. Bring to a boil and boil for 2 minutes. Remove from heat. Stir in remaining coconut. Spoon warm sauce over warm cake. Serve warm or cool, with whipped topping, if desired.JM. I got this recipe out of the EASY HOMEMADE DESSERTS (Using Jell o Pudding). It was published in 1959. I have about worn it out.
