Ingredients
- 8 eggs
- 550 gr apricots (chopped dried)
- 500 gr sifted cake flour
- 325 gr seeded raisins
- 300 gr sugar
- 290 gr shortening
- 90 gr candied cherries (chopped)
- 90 gr citron (chopped)
- 65 gr candied orange peel (chopped)
- 60 gr blanched almonds
- 5 gr baking powder
- 3 gr salt
- 2 gr lemon rind (grated)
Combine fruits, nuts and rind with half of flour. Cream shortening and sugar until fluffy. Beat in eggs, one at a time. Combine remaining flour, salt and baking powder and sift together 3 times. Add to creamed mixture. Add fruit and nut mixture and blend well. Pour into greased loaf pans lined with greased brown paper. Bake in a 300 degree over for 1.5 hours. Makes 4 loaves (7x3x 2.5)
