  • 60 cameron road
  • 10 sprigs of flowering chives i used cornish game hens
  • 6 overlapping winter melon on side of pigeons
  • 5 stock
  • 5 cms wide
  • 4 shallots
  • 3 cms long
  • 2 cms (thick)
  • 2 young pigeons
  • 2 tbs water
  • 1 tbs oil
  • 1 kg chicken
  • 1/2 cm
  • 1/2 his life in cantonese restaurant kitchens
  • 240 ml pigeon braising stock
  • 120 ml soy sauce (light)
  • 30 ml dark soy sauce
  • 12 gr cornstarch
  • 5 ml oyster sauce
  • 4 gr salt
  • 1 gr sugar
  • 12 slices about
  • 12 slices chinese ham
  • 4 slices ginger root
