Ingredients
- 1 onion (red)
- 1 tomato
- 1 salt
- 1 assorted baby lettuces
- 90 ml lime juice (fresh)
- 60 ml mayonnaise
- 34 gr cilantro (chopped fresh)
- 26 gr chili powder
- 8 gr cracked black pepper
- 6 gr cumin
- 2 ml pepper sauce (red)
- 8 slices sourdough bread (sliced)
2. Make Smoky Red-Onion Salsa: Grill onion and tomato slices 2 minutes per side. Chop coarsely and transfer to bowl. Stir in remaining ingredients. Makes 2 cups.
3. Combine chili powder, cumin and pepper in small bowl. Rub all over chicken. Sprinkle with salt.
4. Grill chicken over medium-hot heat until cooked through, 4 to 5 minutes per side. Grill bread until golden, 30 to 60 seconds per side.
5. Top 4 bread slices with mayonnaise, lettuces, chicken, then salsa. Top with remaining bread.
