Ingredients
- 4 chickent breast (halves)
- 2 garlic (cloves)
- 1 cooking spray
- 60 ml low-sodium chicken broth
- 30 ml lemon juice
- 14 gr dry bread crumbs
- 5 gr margarine
- 3 gr parsley (fresh)
- 2 gr lemon rind (grated)
- 1 gr basil leaves (dried)
- 1 gr pepper
- 8 slices lemon (sliced)
1. Combine first 5 ingredients in a shallow dish; set aside.
2. Place chicken between 2 sheets of heavy-duty plastic wrap; flatten to 1 cm thickness, using a meat mallet or rolling pin. Lightly coat both sides of the chicken with cooking spray, dredge chicken in breadcrumb mixture. 3. Melt margarine in a large nonstick skillet coated with cooking spray over medium-high heat. Ad chicken; cook 4 minutes on each side or until done. Remove chicken from skillet. Set aside; keep warm. Add lemon slices toskillet; saute 30 seconds.
