Ingredients
- 6 corn tortillas nonfat
- 1 clove garlic (minced)
- 260 gr kidney beans
- 260 gr great northern beans (drained)
- 240 ml tomato sauce
- 150 gr corn kernels
- 120 gr nonfat cottage cheese
- 120 gr onion (chopped)
- 100 gr celery (chopped)
- 60 ml water
- 55 gr cheddar cheese
- 8 gr chili powder
Combine the water, onion, garlic and celery in a microwave safe casserole. Microwave uncovered on high for 5 minutes or until onions and celery are tender. Combine with chili powder, cayenne pepper, corn, beans, and tomato sauce. Place 3 corn tortillas on the bottom of a 2 litre e microwave-safe casserole dish. top with half of the tomato-bean mixture. Spread half cup of the cottage cheese over the tomato-bean mixture. Sprinkle with quarter cup of the grated cheddar cheese. Repeat layers. Microwave uncovered on high for dozen minutes or until cheese has melted, and ingredients are warmed through. Let stand 5 minutes before serving.
