- 130 gr butter softened (unsalted)
- 130 gr all purpose flour
- 120 gr blanched almonds
- 110 gr clarified butter
- 60 ml lemon juice (fresh)
- 6 gr lemon rind (freshly grated)
- 5 gr double-acting baking powder
- 1 gr salt
- some clarified butter
Sift the confectioners' sugar over the cooled madeleines prior to serving.
