Ingredients
- 2 garlic (cloves)
- 2 weeks
- 1 bay leaf
- 240 ml water
- 160 gr mushrooms
- 120 ml olive oil
- 60 ml wine vinegar (red)
- 45 ml lemon juice
- 18 gr tomato paste
- 12 gr parsley
- 3 gr peppercorns
- 2 gr thyme
- 2 gr coriander seeds
mushrooms with slotted spoon the boil remaining liquid down about 5-10 minutes or until half cup remains. Stir in brandy and season with salt. Strain over mushrooms and leave overnight. Garnish with parsley or chives before serving.
