Ingredients
- 4 eggs (separated)
- 1 1/2 sultanas
- 1 cherries (red)
- 1/2 lemon extract
- 600 gr pineapple (crushed)
- 375 gr flour
- 230 gr butter
- 200 gr sugar (white)
- 130 gr flour
- 120 gr slivered almonds
- 95 gr mixed peel
- 5 gr baking powder
- 4 gr vanilla
Cream butter and sugar, add lemon extract, vanilla and egg yolks. Beat till fluffy. Add flour and baking powder alternately with pineapple. Add well floured fruit and nuts. Fold in stiffly beaten egg whites. Spoon into pans lined with 2 layers of greased brown paper. Bake at 140ÂșC or 2- half to 3 hours or till done. Origin: Marg Salstrom, mother in law.
