Ingredients
- 1 onion (chopped)
- 475 gr kidney beans (drained)
- 425 gr butter beans (drained)
- 260 gr pork
- 140 gr tomatoes (chopped)
- 130 gr bulk sausage (hot)
- 55 gr brown sugar packed
- 16 ml worcestershire sauce
- 2 ml dry mustard
- 4 slices bacon
* May substitute 4 ounces of tomato sauce.
Crumble sausage, chop bacon and fry. Reserve the drippings to cook onions until tender. Pour off excess fat. Combine meat, onions and remaining ingredients in a 2 litre casserole. Bake covered @ 190ºC or 40 minutes, uncovered for 20 minutes.
I use a crockpot and simmer on low forever. Around 2 hours before serving I remove the lid and allow it to continue to simmer.
