Ingredients
- 4 english muffins split
- 1 egg (white lightly beaten)
- 1 basil leaves for potato chips (fresh garnish)
- 210 gr cod fillet (boneless)
- 120 ml mayonnaise
- 28 gr italian-style dry bread crumbs
- 16 gr onion (finely chopped)
- 16 ml lemon juice (fresh)
- 10 ml vegetable oil
- 7 gr onion (finely chopped)
- 6 gr capers (chopped)
- 2 gr basil (chopped fresh)
- 1 gr lemon peel (grated)
- 1 gr salt
- 1 gr pepper (freshly ground)
Heat grill. Make Basil Tartar Sauce: Combine all ingredients in small bowl. Cover and refrigerate. Makes half cup. Process fish in food processor, pulsing just until shredded. Add onion, lemon juice, salt and pepper; pulse briefly to blend. Transfer to medium bowl; stir in egg white and bread crumbs. Shape into four 1 cm-thick patties. Brush both sides of patties with oil. Grill over medium-hot heat 4 to 5 minutes per side, until browned and cooked through. Meanwhile, grill tomato slices 3 to 4 minutes per side. Place burgers on bottoms of English muffins. Top each with 2 tablespoons tartar sauce, tomatoes and basil leaves. Top with muffins. Serve with potato chips, if desired. Makes 4 servings.
