Ingredients
- 4 garlic (cloves minced)
- 3 jalapeno chile pepper seeded
- 2 cans tomatoes (chopped)
- 700 ml beef broth
- 525 gr black beans (canned rinsed)
- 450 gr venision sirloin in (cut)
- 450 gr beef (ground)
- 240 gr onions (yellow chopped)
- 140 gr green pepper (chopped)
- 120 ml olive oil
- 45 gr chili powder
- 40 gr masa harina
- 26 gr celery (chopped)
- 4 gr salt
- 2 gr cumin (ground)
- 1 gr cayenne pepper
- 1 gr pepper (white)
Heat oil in a large Dutch oven or kettle over moderately high heat. Brown veni son and ground beef in batches, transferring each to a bowl when browned; leave liquid in pot. Cook onion, green pepper, celery, garlic and chiles in beef ju ices, stirring until onion is soft. Add masa harina, chili powder, Add cayenn e, cumin, pepper and salt and cook 5 minutes, stirring constantly. Add tomatoe s, beef broth and meat; simmer, uncovered, 1.5 hours, or until meat is tender . Stir in beans and simmer 15 minutes more.
