Ingredients
- 2 garlic (cloves minced)
- 525 gr navy beans (cooked)
- 425 ml vegetable broth
- 260 gr mushrooms (sliced)
- 180 gr onion (chopped)
- 160 gr tempeh (cut into)
- 140 gr green bell pepper (chopped)
- 140 gr bell pepper (red chopped)
- 4 gr ginger root (fresh minced)
- 4 gr chili powder
- 2 gr cumin (ground)
In large saucepan over medium heat, cook tempeh, onion and garlic in half cup vegetable broth, stirring occasionally, until onion is soft and liquid has evaporated, about 10 minutes. Mix in remaining 1.25 cup broth and remaining ingredients; simmer 15 to 20 minutes. Add additional broth as necessary. Serves 4.
