Ingredients
- 9 round cake with vegetable spray (pan)
- 1 egg
- 5/8 apple mixture over batter
- 5/8 batter over bottom (pan)
- 2 quart saucepan
- 2 1/2 c flour
- 1 1/4 cup sugar
- 1 1/4 c sugar divided
- 2 c apples (peeled)
- 3/4 c buttermilk
- 3/4 c margarine softened
- 1/4 c currants
- 1 tb corn syrup (light)
- 1 tb cornstarch
- 1/2 ts baking soda
- 1/2 ts baking powder
- 1/4 ts salt
- 1/4 ts nutmeg
- 1/2 ts cinnamon
remaining batter and apple mixture, spreading evenly. Sprinkle with reserved crumb mixture. Bake at 350F for 45 minutes. Cool slightly before serving.
