Ingredients
- 3 egg whites
- 1 green onion (chopped)
- 1 egg
- 1 1/2 pounds asparagus trimmed
- 2 1/2 cups nonfat cottage cheese
- 4 ounces skim mozzarella cheese
- 1/2 cup parsley (fresh)
- 1 1/2 tablespoons parmesan cheese (grated)
- 1 teaspoon mustard
Coat 10 inch quiche pan with nonstick cooking spray. Cut asparagus into 2 inch pieces. Steam until tender, about 5 minutes. Cool and chop. Puree cottage chees e, Mozzarella, onion, parsley, egg, egg whites and mustard in processor. Fold i n chopped asparagus. Pour into prepared quiche pan. Sprinkle with Parmesan.
