Ingredients
- 8 sprigs cilantro tied in a bundle (fresh)
- 4 pasilla chilies seeded
- 4 garlic (cloves)
- 2 ancho chilies seeded
- 2 corn tortillas quartered
- 1 cinnamon stick
- 1 chili de arbol seeded
- 1 onion (yellow)
- 5 1/2 cups chicken stock
- 1 1/2 pounds beef stew meat in
- 1 1/2 cups dark beer
- 1 1/2 cups chicken stock in a saucepan over high hea bring to a (boil)
- 6 tablespoons corn oil
- 2 tablespoons cumin (ground)
- some salt
- some additional stock
- some combine chilies
- some black pepper
When thick, add meat, beer, and 4 cups chicken stock, stirring well. Lower heat and simmer, uncovered, for 1 hour or until very thick and reduced by half. Remove from heat and stir in the cinnamon and cilantro bundle. Let stand, without stirring, for 15 minutes. Remove cinnamon and cilantro and stir in lime juice. Season with salt and pepper.
