Ingredients
- 1 salt and pepper
- 1 clove garlic
- 4 lb pork spareribs (lean)
- 1/2 c honey
- 1/4 c lemon juice
- 2 ts ginger (grated)
- 2 ts lemon peel (grated)
- 1/2 ts chilies (crushed red)
- 1 ts rosemary
- 1/2 ts sage (ground)
Preheat oven to 450 F. Completely cover spareribs with water in a large pot or deep skillet. Bring to a boil, uncovered, over medium heat. Simmer 4 minutes. Drain liquid, reserving for other use, if desired. Season both sides of spareribs with salt and pepper. Place spareribs on a rack in roasting pan. Cover loosely with foil. Bake 15 minutes. Combine remaining ingredients; mix well. Reduce oven temperature to 350 F. Brush spareribs with honey mixture. Bake until fully cooked, about 1 hour longer, brushing with honey mixture every 15 minutes. Makes 4 to 6 servings.
