Ingredients
- 1 salt and pepper
- 1 clove garlic
- 1,000 gr pork spareribs (lean)
- 120 ml honey
- 60 ml lemon juice
- 10 gr ginger (grated)
- 4 gr lemon peel (grated)
- 2 gr chilies (crushed red)
- 1 gr rosemary
- 1 gr sage (ground)
Preheat oven to 230ºC . Completely cover spareribs with water in a large pot or deep skillet. Bring to a boil, uncovered, over medium heat. Simmer 4 minutes. Drain liquid, reserving for other use, if desired. Season both sides of spareribs with salt and pepper. Place spareribs on a rack in roasting pan. Cover loosely with foil. Bake 15 minutes. Combine remaining ingredients; mix well. Reduce oven temperature to 180ºC . Brush spareribs with honey mixture. Bake until fully cooked, about 1 hour longer, brushing with honey mixture every 15 minutes. Makes 4 to 6 servings.
